Teriyaki Glazed Salmon

Teriyaki Glazed Salmon features salmon fillets coated with a homemade glaze made from soy sauce, brown sugar, minced ginger and garlic, rice wine vinegar, and pineapple juice thickened with cornstarch. The salmon is oven-baked then broiled to caramelize the glaze, creating a balance of savory, sweet, and slightly tangy flavors with a glossy finish. This method yields a tender texture with nicely glazed tops, suitable for a straightforward main course.

Description

Teriyaki Glazed Salmon highlights fresh salmon fillets coated with a rich teriyaki glaze made from soy sauce, brown sugar, minced ginger and garlic, rice wine vinegar, and pineapple juice. The glaze is cooked and thickened using cornstarch, then spooned generously over the salmon. Baking the salmon at 400 degrees allows it to cook through while locking in flavor, and finishing under the broiler caramelizes the glaze, enhancing its sweetness and depth. The glaze provides a glossy sheen and sticky texture that clings to the fish.

The salmon fillets maintain a moist and tender interior with a flavorful crust of sweet and savory notes. The combination of ginger and garlic adds warmth and aroma, while pineapple juice contributes a subtle fruity brightness. This dish works well as a simple dinner centerpiece accompanied by steamed rice or vegetables, letting the rich glaze shine.

This recipe requires minimal ingredients and manageable steps, making it practical for home cooks who want a flavorful salmon dish without complicated preparation.

Ingredients

Servings
  • 1 1/2 - 2 pounds salmon fillets
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 1/2 tsp ginger minced
  • 2 cloves garlic minced
  • 1/2 Tablespoon rice wine vinegar
  • 6 oz. pineapple juice
  • 1 Tablespoon cornstarch
  • 2 Tablespoons water
  • green onion for garnish, sliced
  • sesame seeds for garnish

Instructions

  1. Preheat oven to 400 degrees. Line a rimmed cookie sheet with aluminum foil and spray with nonstick cooking spray. Set aside.
  2. In a small sauce pan, combine soy sauce, brown sugar, ginger, garlic, and rice wine vinegar and bring to a simmer over medium-low heat. Stir and cook for five minutes.
  3. In a small bowl, combine the cornstarch and water, mixing well. Add to the pan along with the pineapple juice, and allow mixture to return to a simmer. Continue cooking for 5-10 more minutes until mixture thickens and coats the back of a spoon. Remove from heat and allow to cool slightly.
  4. Pat salmon fillets dry with a paper towel and place on the prepared cookie sheet. Spoon glaze generously over the tops of each fillet. You will have some left over!
  5. Place pan in the upper half of the oven and cook for 10-12 minutes. Remove pan from oven and add a small amount of leftover glaze to the top of each fillet. Turn oven broiler to high and broil the salmon for an additional 2-3 minutes.
  6. Garnish with sliced green onions and sesame seeds. Enjoy!
