Tex Mex Stuffed Peppers

Tex Mex Stuffed Peppers are bell pepper halves filled with a savory mixture of ground beef, taco seasoning, rice, salsa, corn, and black beans. Topped with enchilada sauce and cheddar cheese, the peppers bake until tender and the cheese melts, creating a hearty combination of spices and textures perfect for a balanced dinner.

Description

Tex Mex Stuffed Peppers use halved bell peppers as vessels for a filling composed of browned ground beef seasoned with taco spices, combined with cooked rice, salsa, corn, and black beans. The beef is cooked until it develops a deep brown crust for flavor before mixing the other ingredients. The mixture is spooned into peppers, topped with enchilada sauce and shredded cheddar, then baked covered for 45 minutes to cook the peppers and meld flavors.

After baking, the peppers are uncovered, topped with the remaining cheese, and baked briefly to melt and slightly brown the cheese topping. This layering creates a creamy and tangy finish that complements the mildly spicy, hearty filling with varying textures from the tender peppers, beans, and crisp corn.

These stuffed peppers can serve as a complete meal due to the combination of protein, grains, and vegetables. Using a cast iron skillet for browning beef ensures rich flavor development. Baking covered keeps the peppers moist while cooking through evenly.
