Texas Sheet Cake

Texas Sheet Cake delivers a rich chocolate cake baked in a large sheet pan, made from cocoa, butter, sugar, flour, buttermilk, and eggs. The cake is topped with a warm cocoa and buttermilk frosting blended with powdered sugar and pecans for added texture. It bakes quickly into a moist, thin cake with a fudgy frosting spread over the top while warm, creating a glossy finish and tender crumb.

Description

Texas Sheet Cake starts with melting butter, cocoa powder, and water to a boil, forming the chocolate base. Flour, sugar, and baking soda are stirred in off heat, then eggs, buttermilk, and vanilla extract are incorporated to create a smooth batter. Poured into a greased and floured large baking sheet, the batter bakes until a toothpick inserted comes out clean, producing a thin, moist chocolate cake layer.

The frosting is prepared separately by boiling butter, cocoa, and buttermilk, then stirred with powdered sugar until smooth. Vanilla and chopped pecans add flavor and crunch. This warm frosting is poured over the hot cake, saturating the top and setting into a shiny, chocolatey layer as it cools.

This cake is ideal for gatherings due to its large size and ease of slicing. It offers a balance of tender cake crumb with a rich, creamy, nut-studded topping. The quick bake time and one-pan method simplify preparation.

To bake in a smaller 18 x 13-inch pan, reduce baking time to about 20 minutes and check doneness accordingly. Pecans are optional but add texture and flavor in the frosting.

Ingredients

Servings

Cake

  • 8 ounces butter plus extra for the pan
  • 1/4 cup cocoa powder
  • 1 cup water
  • 2 cups all-purpose flour plus extra for the pan
  • 2 cups sugar
  • 1 teaspoon baking soda
  • 2 egg large
  • 1/2 cup buttermilk
  • 1 teaspoon vanilla extract

Frosting

  • 4 ounces butter
  • 4 tablespoons cocoa powder
  • 6 tablespoons buttermilk
  • 16 ounces powdered sugar
  • 1 1/2 cups pecans optional, or walnuts, chopped

Instructions

Cake

  1. Preheat the oven to 350°F. Grease and flour a baking sheet 18"x26".
  2. In a saucepan, bring the butter, cocoa, and water to a boil. Remove from the heat.
  3. Add the flour, sugar, and baking soda, and stir to combine.
  4. Add the eggs, buttermilk, and vanilla. Stir until well incorporated.
  5. Pour the batter into the prepared baking pan
  6. Bake for 18 to 20 minutes.
  7. You can check for cake doneness by inserting a toothpick in the center of the cake and if it comes out clean, the cake is done.

Frosting

  1. While the cake is baking, prepare the frosting: Bring the butter, cocoa, and buttermilk to a boil in a saucepan.
  2. Add the powdered sugar. Stir only until smooth.
  3. Add the vanilla and pecans and stir to combine.
  4. Pour the frosting over the warm cake.

Notes

  • When using an 18 x 13-inch pan instead of a large sheet, reduce baking time to around 20 minutes and test for doneness.
  • Chopped pecans in the frosting provide extra crunch but can be omitted if preferred.
