Texas Sheet Cake Cookies
Description
Texas Sheet Cake Cookies use a chocolate cake mix combined with eggs and oil to form a cookie dough that is scooped and chilled before baking. This step prevents excessive spreading, allowing the cookies to keep a soft but firm texture after their brief 8-minute bake. Immediately after baking, the cookies are topped with a freshly made frosting that is boiled briefly to create a smooth, shiny chocolate glaze made from sugar, butter, milk, and semi-sweet chocolate chips. The frosting cools and sets on the warm cookies, giving them a luscious finish.
The cookies offer a rich chocolate flavor reminiscent of the classic Texas sheet cake but in a single-serving format suitable for snacking or casual sharing. Their soft texture combined with the creamy frosting provides a satisfying balance of chewiness and smoothness.
Chilling the dough before baking is important to achieve the desired shape and prevention of spreading. The frosting should be spread over the cookies while both the cookies and frosting are still warm to ensure a nice even coating that sets properly as it cools. This recipe's two-egg adjustment enhances the dough's structure and overall cookie texture.
