Texas Sheet Cake Cookies

Cookies

  • 1/2 cup semisweet chocolate chips
  • 1 ½ cups all-purpose flour
  • 1/4 cup cocoa powder unsweetened
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon kosher salt
  • 1/2 cup butter softened, salted
  • 1/3 cup granulated sugar
  • 1/3 cup light brown sugar packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/3 cup buttermilk

Chocolate Icing

  • 6 Tablespoons butter salted
  • 1/4 cup milk
  • 2 Tablespoons cocoa powder unsweetened
  • 1 teaspoon vanilla extract
  • 2 cups powdered sugar sifted

Instructions

Cookies

  1. Preheat the oven to 350 degrees F. Line 2 large baking sheets with parchment paper.
  2. Place the chocolate chips in a microwave-safe bowl. Microwave in 20-second increments, stirring in between, until melted and smooth. Allow to slightly cool down. 
  3. Whisk together the all-purpose flour, cocoa powder, baking powder, baking soda and salt in a medium bowl. Set aside.  
  4. Place the salted butter, granulated sugar, and brown sugar in a large bowl. Using an electric mixer, beat on medium-high speed until combined and fluffy. Add the egg, vanilla extract, and melted chocolate. Continue to beat until well combined.
  5. Gradually beat in half of the flour mixture, then the buttermilk, then the remaining flour mixture until smooth.
  6. Drop two rounded tablespoonfuls of dough onto the prepared baking sheets, placing 2 inches apart. Bake cookies for 10 minutes. (Don’t over-bake.) Allow to cool directly on the baking sheets.

Chocolate Icing

  1. Melt the butter in a small saucepan. Remove from heat and whisk in the milk, cocoa powder, and vanilla until smooth. 
  2. Add the powdered sugar and whisk until smooth. Allow the icing to stand for about 10 minutes to slightly thicken. Spread the icing on the cookies. Allow it to set before serving. Enjoy!
