Texas-Style Peach Cobbler

Texas-Style Peach Cobbler is a baked dessert featuring fresh sliced peaches mixed with lemon zest and sugar, layered over a smooth batter enriched with buttermilk and melted butter. The cobbler bakes to a golden brown with crisp edges, combining juicy fruit and tender cake-like topping. It is often served warm with ice cream or whipped cream.

Description

This recipe starts by melting butter in a baking dish, then whisking together flour, baking powder, sugar, salt, and buttermilk to form a smooth batter. Fresh peeled and sliced peaches are tossed with sugar and lemon zest to enhance their natural sweetness and brightness. The batter is poured into the hot buttered dish, and the peach mixture is spread evenly on top, followed by an additional sprinkle of sugar. Baking at 350°F allows the batter to rise and cook through, while the peaches soften and release their juices, creating a moist, flavorful filling beneath a tender, golden crust. The edges crisp up slightly due to the butter and sugar.

The cobbler can be served warm, making it a comforting dessert option. Its balance of sweet peaches and buttery topping pairs well with vanilla ice cream or whipped cream to complement the warm fruitiness. The texture contrasts between the juicy fruit and cakey topping provide a classic southern-style dessert experience.

Ingredients

Servings
  • 12 Tablespoons butter (divided)
  • 1 1/2 cups sugar (divided)
  • 8 medium peach peeled and sliced, fresh ripe
  • 1 teaspoon lemon zest fresh
  • 1 1/2 cups flour
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 1/2 cups buttermilk (or milk)

Instructions

  1. Preheat oven to 350 degrees. Place 4 Tablespoons butter in a 9 x 13 baking dish. Place in the oven and let the butter melt, watching carefully. Remove from oven.
  2. In a medium-size bowl, stir together 1/4 cup of sugar, fresh sliced peaches, and lemon zest. Set aside.
  3. In a large bowl, stir together flour, baking powder, remaining 1 1/4 cup of sugar, and salt. In a microwave-safe bowl, melt the remaining 8 Tablespoons of butter. Whisk in melted butter (let cool for several minutes before adding) and buttermilk. Stir until smooth.
  4. Pour batter into the pan with the melted butter. Sprinkle the peach mixture evenly over batter. Generously sprinkle with sugar. Bake until golden brown and edges are crisp -- about 42-48 minutes.
  5. Serve with vanilla ice cream or homemade whipped cream.
