Ingredients
- 2 tablespoons neutral cooking oil generic cooking oil
- 1/4 onion finely diced, small
- 3 cloves garlic minced
- 10 oz (280g) ground chicken
- 1/2 cup cashew nut whole roasted
- 1 tablespoon fish sauce
- 1 tablespoon soy sauce
- 1 tablespoon cilantro chopped leaves
- 1 head butter lettuce
Sauce:
- 3 tablespoons Thai sweet chili sauce
- 2 teaspoons lime juice
- 1 tablespoon cilantro chopped leaves
- Pinch white sesame seeds
Instructions
- Mix all the ingredients for the sauce in a small bowl and stir to combine well. Clean the butter lettuce by peeling each leaf off the stem and set aside.
- Heat a wok or skillet over medium heat and add the oil. Once the oil is hot, add the onion and garlic, and stir-fry until slightly browned. Add the ground chicken, stirring continuously with a spatula to break up any lumps. Then, add the cashew nuts, fish sauce, and sweet soy sauce, and stir to combine well.
- Continue to cook until the filling is dry but still moist. Add the cilantro and turn off the heat.
- To assemble the lettuce wraps, place 1 tablespoon of the filling in the center of a butter lettuce leaf and top with some sauce. Wrap it up and enjoy immediately.
