Thai Chicken Meatballs
Description
Thai Chicken Meatballs bring together ground chicken seasoned with aromatic ingredients such as ginger, lemongrass paste, cilantro, and garlic. Mixing these with breadcrumbs and finely diced onion helps create meatballs that are cohesive and tender. Initially browned in a skillet with vegetable oil to develop color, they are then baked at 400°F to ensure they cook through evenly and maintain juiciness. The mix of spices and herbs gives a bright, fresh flavor characteristic of Thai cuisine.
The texture balances a crisp exterior from pan-searing and a moist interior from baking. This two-step cooking process helps lock in flavor while providing a satisfying bite. These meatballs serve well as appetizers or additions to salads and rice dishes.
Freezing instructions allow for convenient make-ahead options; raw meatballs can be frozen on a baking sheet before storage, and cooked meatballs also freeze well for reheating later. Optional additions such as green onions, fish or soy sauce, and fresh lime juice can be incorporated to tailor the umami and brightness of the dish.
Ingredients
- 1 pound ground chicken (or turkey)
- 1/4 cup onion finely diced
- 1/2 cup cilantro chopped
- 2 teaspoons ginger grated
- 1 teaspoon lemongrass paste
- 1/4 cup breadcrumbs
- 2 cloves garlic minced very finely
- 1 teaspoon salt
- 1/2 teaspoon black pepper cracked
- 2 tablespoons vegetable oil
Instructions
- Preheat the oven to 400 degrees F.
- Combine the ingredients (except for oil) in a bowl.
- Use a cookie scoop, and roll into small balls in your hands.
- In medium skillet, heat oil over medium heat. Add meatballs and brown.

Notes
- Freeze raw meatballs on a baking sheet before storing in a freezer bag; bake frozen at 400°F for 10-15 minutes.
- Cooked meatballs can also be frozen and reheated in the microwave until hot.
- Adding green onion with cilantro enhances color and flavor.
- Fish sauce or soy sauce adds umami if desired.
- Fresh lime juice brightens the flavor and can be added before serving.
