Ingredients
Chicken:
- 2 chicken breast
- 2 teaspoon red Thai curry paste
- 2 tablespoon coconut cream canned
Sauce:
- 3 tablespoon red Thai curry paste ~45g
- 6-7 tablespoon coconut cream ~100ml, canned, or coconut milk
- 1 Tbsp + 1 tsp granulated sugar or to taste
Main:
- 1 pizza dough batch
Toppings:
- 1 lb mozzarella cheese
- 2 tomato sliced
- 6 kaffir lime leaves whole or thinly julienned
- handful Thai basil reserve extra for garnish after baking
- ¼ C cilantro chopped
- 1 jalapeño sliced; if you like it extra spicy, or red Thai chili
Instructions
Prepare the chicken:
- Flatten the chicken and place onto a baking sheet lined with aluminum foil.
- In a small bowl, combine the red curry paste and coconut cream until it is incorporated.
- Spread the sauce on both sides of the chicken.
- Broil at 500°F/260°C on an oven rack set 5-6" from the top for 8-10 minutes per side, or until an instant-read thermometer reaches a temperature of 165°F/74°C at the thickest part of the chicken breast.
- Remove from oven and let cool.
- Slice chicken into pieces. Set aside for later.
Preheat oven:
- Preheat a baking steel or pizza stone on the lowest rack in the oven at 500°F/260°C for at least 1 hour.
Make the sauce:
- In a bowl, combine red curry paste, coconut milk and sugar.
- Stir until the mixture comes together and give it a taste, adjust the seasoning as needed.
Assemble:
- On a lightly floured work surface, stretch out the pizza dough to about 14" in diameter and place onto on a large piece of parchment paper.
- Spread the red curry sauce over the surface of the dough.
- Add mozzarella cheese, cooked chicken, tomato slices, kaffir lime leaves and basil.
- Bake in a preheated 500°F/260°C oven for 6-7 minutes, or until the crust is crisp and the cheese is melty.
- Remove from oven, top with cilantro and extra fresh basil, jalapenos/Thai chili (if using), slice and serve.
- Repeat with the remaining dough.
Notes
- This recipe yields approximately two 14-inch pizzas.
- Broil chicken until an internal temperature of 165°F is reached for safety and juiciness.
- Preheat the pizza stone or steel for at least one hour at 500°F to achieve a crispy crust.
- Adjust the jalapeño amount to control the level of spiciness on the pizza.
