Thai Chicken Skewers with Spicy Peanut Sauce

These Thai Chicken Skewers feature tender chicken tenderloins marinated in a lime, soy, garlic, and ginger mixture, then baked on skewers until juicy and flavorful. Served alongside a spicy peanut sauce combining peanut butter, warm water, red pepper flakes, soy, garlic, ginger, and lime juice, the dish offers a balance of savory, tangy, and mildly spicy flavors. The skewers are great for pairing with brown rice and vegetables for a complete meal.

Description

The chicken is marinated in a mix of soy sauce, minced garlic, fresh or dry ginger, lime juice, olive oil, salt, and black pepper, imparting a fragrant and slightly tart profile. After marinating for an hour, the chicken tenders are threaded onto skewers, brushed with more marinade, then baked at 400°F until cooked through but still moist.

The accompanying peanut sauce combines peanut butter with warm water to create a creamy consistency, then is flavored with red pepper flakes for heat, soy sauce for saltiness, garlic and ginger for aroma, and lime juice for brightness. This sauce adds a spicy, nutty complement to the mild chicken.

Serving the skewers with brown rice, broccoli, and cherry tomatoes makes for a balanced meal covering protein, grains, and vegetables with bold Thai-inspired flavors.
