Thai Chicken Skewers with Spicy Peanut Sauce
Description
The chicken is marinated in a mix of soy sauce, minced garlic, fresh or dry ginger, lime juice, olive oil, salt, and black pepper, imparting a fragrant and slightly tart profile. After marinating for an hour, the chicken tenders are threaded onto skewers, brushed with more marinade, then baked at 400°F until cooked through but still moist.
The accompanying peanut sauce combines peanut butter with warm water to create a creamy consistency, then is flavored with red pepper flakes for heat, soy sauce for saltiness, garlic and ginger for aroma, and lime juice for brightness. This sauce adds a spicy, nutty complement to the mild chicken.

Ingredients
- chicken and marinade
- 8 chicken tenderloin
- 1/4 cup soy sauce + 2 tsp
- 4 garlic minced, cloves
- 2 tsp ginger minced (or 1 tsp dry ginger powder, fresh
- lime juice juice of 2 limes
- 1/8 cup olive oil
Spicy Peanut Sauce:
- 4 tbsp peanut butter
- 1/4 cup water warm
- 1/2 tsp red pepper flakes
- 1 tbsp soy sauce
- 1 garlic minced, clove
- 1 tsp ginger or 1/2 tsp dry ginger powder, minced
- lime juice of 1
Instructions
Chicken and Marinade:
- Whisk all the ingredients except chicken in a bowl, place chicken tenders in the marinade and let it marinate in the fridge for 1 hour.
- Preheat the oven to 400 F and line a baking sheet with aluminum foil.
- Place the chicken tenders on skewers and place them on the baking sheet. Brush the rest of the marinade on the tenders.
- Bake in the oven for 15 - 20 minutes until chicken is cooked but not dry.
Meanwhile, make the spicy peanut sauce:
- Mix all the ingredients in a bowl and adjust the saltiness by adding more soy sauce.
- Serve Thai chicken skewers with brown rice, broccoli, cherry tomatoes and spicy peanut sauce.
