Thai Fried Mussels Recipe (Hoi Tod)

This is a quick and easy Thai fried mussels recipe, also known as hoi tod. Made with a crispy egg batter, bean sprouts, and simple Thai seasonings.

Ingredients

  • 3 tablespoons tapioca starch
  • 6 tablespoons tempura flour
  • 0.25 teaspoon salt
  • 1 teaspoon white pepper
  • 0.5 tablespoon Golden Mountain Sauce (see notes)
  • 120 ml water ice-cold
  • 100 g mussel meat (see notes)
  • 5 tablespoons neutral cooking oil generic cooking oil
  • 2 egg
  • 10 g green onions mixed
  • 10 g cilantro mixed
  • 180 g bean sprout

Instructions

  1. In a bowl, combine tapioca starch, tempura flour, salt, white pepper, and golden mountain sauce. Gradually mix in ice-cold water until smooth. Allow this batter to sit for 10 minutes.
  2. Mix the mussels into the batter.
  3. Heat oil in a flat frying pan over medium heat until hot. Pour the prepared batter into the pan to fry the mussels.
  4. Immediately crack eggs over the batter. Gently spread the egg yolks and sprinkle with coriander and green onions. Cook and flip to brown the other side.
  5. Continue flipping the omelette until it's golden and crispy on both sides. Once done, remove from your pan.
  6. In the same pan, fry the bean sprouts until they're softened to your liking. Once ready, transfer them onto a serving dish and add the fried egg on top. Enjoy!

  • Mussels or oysters - You can make hoi tod with either mussels or oysters.
  • Golden mountain seasoning sauce - Golden mountain sauce is a savory Thai seasoning sauce made from fermented soybeans, salt, and sugar.
