Thai Holy Basil Stir Fry: Pad Krapaw (Pad Kra Pao)
Description
Thai Holy Basil Stir Fry, known as Pad Krapaw (or Pad Kra Pao), uses ground chicken, pork, or beef cooked with garlic, shallots, and Thai chilies. A sauce of soy, oyster, and fish sauces combined with water and sugar creates a flavorful base. Green beans provide textural interest and a slight crispness. The quick stir-fry method preserves the tenderness of the meat and the aromatic qualities of fresh holy basil by adding it after cooking and removing from heat.
The dish has a balance of savory, spicy, and sweet flavors simmered in a flavorful sauce that thickens slightly as it reduces. Usually served hot over steamed rice, it is often topped with a fried egg which adds richness and a creamy texture that complements the spicy stir-fry.
The recipe suggests frying eggs separately to serve alongside. The inclusion of fresh holy basil leaves last keeps their aroma vibrant. Careful timing ensures the meat is tender and green beans retain some bite.
