Ingredients
- 1 pizza crust homemade or store-bought
- 1 cup sweet chili sauce (see recipe below)
- 2 cups mozzarella cheese shredded
- 2 cups pork use leftover pork or use slow cooker recipe below, shredded
- ¼ cup cilantro roughly chopped, leaves
Sweet Chili Sauce
- 1 ½ teaspoons red chili flakes crushed
- 4 teaspoons garlic minced
- ½ cup white vinegar
- ⅔ cup sugar
- 1 teaspoon salt
- ⅔ cup water + 2 tablespoons, divided
- 1 tablespoon corn starch
Pork
- 1 pound pork roast
- 1 teaspoon salt
- 1 teaspoon onion powder
- 1 teaspoon red pepper flakes crushed
- 1 cup water
Instructions
- If using slow cooker pork recipe, add water to slow cooker. Add pork to slow cooker. Sprinkle roast with seasonings. Cook on high 4 hours or low 8 hours. Drain slow cooker and shred with two forks.
- To prepare chili sauce, in a small sauce pan whisk together all ingredients except for 2 tablespoons water and the corn starch. Bring to a boil over medium high heat. In a small bowl combine remaining 2 tablespoons water and corn starch and whisk until dissolved. When sauce comes to a boil, add water/cornstarch mixture and stir until sauce thickens. Remove from heat.
- Bake crust for 10 minutes at 400 degrees. Remove from oven, spread sweet chili sauce over crust. Top with mozzarella cheese, and then shredded pork. Sprinkle with chopped cilantro. Return to oven for about 10 minutes until cheese is melty and pizza crust is lightly browned. Slice and serve while still hot, enjoy!
