Thanksgiving Chicken Recipe

This oven-roasted, garlic-herb Thanksgiving Chicken recipe, served with a delicious gravy, is perfect for Thanksgiving dinner!

Ingredients

  • 5 pound chicken whole
  • ¼ cup butter room temperature (½ stick, unsalted
  • ¼ cup olive oil divided
  • 3 cloves garlic minced
  • 2 teaspoons thyme chopped fresh
  • 2 tablespoons sage chopped, fresh
  • 2 teaspoons rosemary chopped, fresh
  • ¾ teaspoon kosher salt
  • ¼ teaspoon black pepper ground

For the Gravy

  • Pan drippings from your chicken
  • 3 tablespoons all-purpose flour
  • cups chicken broth low-sodium
  • salt to taste, Kosher salt and freshly ground

Instructions

  1. Preheat oven to 425°F.
  2. Pat the chicken dry. Tie the legs together with butcher's twine.
  3. In a medium bowl, mix the butter, 3 tablespoons olive oil, garlic, thyme, sage, rosemary, salt, and pepper together.
  4. Loosen the skin on the breast of the chicken. Spread the mixture under the chicken breast skin and all over the chicken.
  5. Add the remaining olive oil to the bottom of a 12-inch cast iron skillet. Place the chicken in the skillet.
  6. Roast in the preheated oven for about 1 hour and 20 minutes, or until the chicken is golden brown and cooked through. Baste 2-3 times while cooking.
  7. Remove the chicken from the pan and set aside. Leave the pan drippings in the skillet.
  8. Place the pan on medium heat. Whisk in the flour until combined. Cook for 2-3 minutes, whisking constantly, until browned.
  9. While whisking, pour in the chicken broth. Bring the mixture to a simmer and cook until thickened, about 5-10 minutes.
  10. Season with salt and pepper to taste. Serve with your roast chicken and enjoy.

Notes

  • Storage: Store Thanksgiving chicken in an airtight container in the refrigerator for up to 3 days or in the freezer for up to 3 months.
