The BEST Apple Crisp

This apple crisp features a crunchy oat and brown sugar topping paired with a spiced apple filling made from thinly sliced Granny Smith apples tossed with melted butter, flour, lemon juice, milk, and warm spices. It is baked until golden and set, resulting in a soft, tender fruit beneath a lightly crisp and crumbly topping. Optionally served with vanilla ice cream and caramel sauce, it works well as a comforting dessert during cooler months.

Description

The BEST Apple Crisp combines classic baking ingredients including oats, flour, brown sugar, and butter to create a crumbly topping that crisps up in a 375°F oven. The apple filling uses tart Granny Smith apples, coated with a mixture of melted butter, flour, lemon juice, milk, brown sugar, cinnamon, nutmeg, and vanilla for balanced flavors and a tender texture.

As the crisp bakes, the topping browns lightly and the apple filling softens without becoming mushy, offering a pleasing contrast of textures. It is typically served warm, often accompanied by vanilla ice cream and caramel sauce, enhancing the sweet and tart flavor profile.

Variations allow for different apple types, gluten-free substitutions, or slow cooker and Instant Pot methods. The crisp can also be prepared ahead or frozen after baking, then reheated to retain its texture and flavor.

Ingredients

Servings

Crumble Topping:

  • 2/3 cup rolled oats old-fashioned
  • 1/2 cup all-purpose flour
  • 1/2 cup light brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon baking powder
  • 1/2 cup butter cut into small pieces, salted

Apple filling:

  • 3-4 large apple peeled and thinly sliced, Granny Smith
  • 3 Tablespoons butter melted, salted
  • 2 Tablespoons all-purpose flour
  • 1 Tablespoon lemon juice
  • 3 Tablespoons milk
  • 1/2 teaspoon vanilla extract
  • 1/4 cup light brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg

For serving (optional):

  • vanilla ice cream
  • caramel sauce homemade

Instructions

  1. Preheat oven to 375 degrees F.
  2. Crumble Toppings: In a medium size bowl combine oats, flour, brown sugar, cinnamon, and baking powder. Add butter and cut in with a pastry blender or fork until well combined. Refrigerate while you prepare the apple filling.
  3. Apple Filling: (I use a Johnny Apple Peeler to peel, core and slice the apples all at once.) In a small bowl stir together melted butter and flour until smooth. Add lemon juice, milk and vanilla and stir. Stir in brown sugar, cinnamon, and nutmeg. Pour butter mixture over apples and toss to coat.
  4. Bake: Pour apple mixture into an 8x8-inch baking dish and spread into an even layer. Sprinkle crumble topping evenly over the apples. Bake for about 35 minutes or until golden brown and top is set. Remove from oven cool at least 15 minutes before serving.
  5. Serve with vanilla ice cream and homemade caramel sauce, if desired.
