The Best Apple Crumb Pie

The Best Apple Crumb Pie features a full, spiced apple filling topped with a crumbly mixture of flour, sugars, cinnamon, and chilled butter. The Granny Smith apples offer a tart flavor and firm texture that holds well during baking, producing a pie that balances sweetness and spice with a crisp-tender crumb topping. Baking at a high temperature initially helps set the crust and create a golden topping while cooking the apples through. This pie can be served warm or at room temperature and is a classic dessert for fall or any occasion when a fruity, crumb-topped pie is desired.

Description

The Best Apple Crumb Pie combines a single pie crust filled with thinly sliced Granny Smith apples tossed with sugar, flour, lemon juice and zest, cinnamon, and nutmeg. The topping is made from a crumbly blend of flour, brown and granulated sugars, cinnamon, and chilled cubed butter that is mixed to a clumpy, cohesive texture.

Baked initially at 450°F for 15 minutes to set the crust and then lowered to 350°F for 45-55 minutes, the pie achieves a well-cooked filling and a browned, crunchy crumb topping. The filling is very full and juicy, so baking on a cookie sheet catches any drips.

This pie is suitable to serve warm or at room temperature, providing a tart and spiced apple flavor with a contrast of textures from the tender filling and crisp topping. It's well-suited to traditional fall dessert menus or anytime a classic apple pie with a crumb topping is wanted.

To maintain the crumble topping, mix thoroughly until it holds together well, using hands if needed. Watch the pie during baking and tent with foil if the topping browns too fast. The pie freezes well before or after baking; if baking from frozen, start at 425°F covered loosely with foil to prevent burning, then reduce heat and bake until done.

Ingredients

Servings
  • 1 Single Pie Crust prepared or homemade

Topping

  • 1 cup all-purpose flour
  • ½ cup brown sugar packed
  • ½ cup granulated sugar
  • 1 teaspoon cinnamon
  • ½ cup butter chilled and cubed, unsalted

Filling

  • 8 apple Granny Smith variety
  • cup granulated sugar
  • 3 tablespoons all-purpose flour
  • ½ tablespoon lemon juice fresh
  • ½ teaspoon lemon optional, zest
  • 1 teaspoon cinnamon
  • teaspoon ground nutmeg

Instructions

Directions

  1. Preheat oven to 450°F.

Topping:

  1. Combine all topping ingredients using a fork until completely mixed and crumbly.

Filling:

  1. Peel, core, and slice apples into thin slices (approximately ⅛ inch). Toss apple slices with sugar, flour, lemon juice, lemon zest (if using), cinnamon, & nutmeg.
  2. Layer apple slices in pie shell (it will be really full) and pour any leftover juice over the apples. Top apple slices with topping and pat it down over the apples. Place pie pan on a cookie sheet (they tend to drip over if really full, this will save your oven).
  3. Bake at 450°F for 15 minutes, reduce heat to 350°F and bake an additional 45-55 minutes. (Poke the center of the pie to make sure the apples are soft all of the way through).
  4. Serve warm or room temperature.

Notes

  • Mix the crumb topping thoroughly until it holds together; use your hands if needed to achieve the right texture.
  • Monitor the topping while baking and cover with foil if it begins to brown excessively before the pie is done.
  • Granny Smith apples are recommended for their tartness and good structure during baking.
  • This pie can be frozen either before baking or after baking. When baking from frozen, start at 425°F covered loosely with foil, bake 20 minutes, then reduce heat to 350°F and continue baking 45-55 minutes.
