Description

The Best Baba Ganoush centers on roasted eggplants that are cut in half, drizzled with olive oil, and roasted until very tender, allowing the flesh to collapse into a soft consistency. Scooping the flesh out and letting it drain removes excess water, which concentrates the texture and flavor. The eggplant pieces are then finely chopped and mixed with crushed garlic, tahini, lemon juice, olive oil, chopped mint, salt, and black pepper. The combination results in a creamy, smoky dip with fresh herbal notes from the mint and a balanced tang from the lemon.

Ingredients

  • 3 eggplant large
  • 1 garlic crushed, clove
  • 2 tablespoon tahini
  • ½ lemon juiced
  • 2 tablespoon extra virgin olive oil
  • 2 tablespoon mint chopped
  • salt to taste
  • black pepper to taste

Instructions

  1. Cut the eggplants in halves and place them in a baking tray. Drizzle some olive oil on the top and a sprinkle of salt. Turn them upside down and roast in the oven for 30 to 45 minutes at 200C. Roast the eggplants until they are tender and have started to collapse.
  2. With a spoon, scoop the flesh out and place it in a strainer for 10 minutes. This will get rid of the excess water that the eggplant contains.
  3. Chop the eggplant into small pieces. We use scissors for this step. Add the crushed garlic, tahini, lemon juice, olive oil, mint, salt and pepper and mix with a fork until everything is incorporated. Taste and adjust seasoning if needed.

Notes

  • Garnish the baba ganoush with chopped fresh mint or pomegranate seeds to add freshness and color.
  • Drizzle extra virgin olive oil on top before serving to enhance richness.
