The Best Banana Cake Recipe

This banana cake uses mashed ripe bananas combined with butter, oils, sugars, and leavening agents to create a moist, tender crumb. The cake is complemented by a silky cream cheese frosting, balancing sweet tanginess with soft richness, and optionally topped with chopped walnuts for texture contrast.

Description

The Best Banana Cake Recipe starts with creamed butter and sugars blended with avocado or similar oil, mashed ripe bananas, eggs, buttermilk, and vanilla extract. These wet ingredients are mixed with a combination of flour, baking soda, baking powder, and salt to produce a batter that bakes into a moist, tender cake. Baking time ranges from 45 to 55 minutes in a 9x13-inch pan, with attention to avoid over-browning especially in glass pans.

The smooth cream cheese frosting includes softened cream cheese, butter, powdered sugar, vanilla, salt, and a touch of heavy cream for spreadability. This frosting is spread over the cooled cake, and optional chopped walnuts can be added on top for some crunch and nutty flavor. The resulting cake features banana flavor with a rich, lightly sweet finish from the frosting.

This cake is well suited to bake-ahead or storing covered, remaining fresh several days when refrigerated. Covering early prevents drying and preserves moistness. Light monitoring towards the end baking prevents overly dark edges, which can be a concern depending on baking dish type.

Notes

  • Monitor the cake color at about 30 minutes to prevent over-browning, tenting with foil if necessary.
  • Baking pan material influences browning; metal pans may brown differently from glass.
  • Store the cake covered in the baking pan at room temperature for a day or chilled up to a week.
