The Best Easy Lemon Bars Recipe

The Best Easy Lemon Bars feature a buttery, lightly sweetened crust topped with a tangy, smooth lemon filling. The crust is baked first until firm but not browned, providing a tender base for the lemon layer. The filling combines eggs, lemon juice, sugar, and flour whipped until frothy, then baked until set. Finished with powdered sugar dusting, these bars offer a balance of bright acidity and sweet richness in a classic lemon dessert bar form.

Description

This lemon bars recipe starts with mixing butter, powdered sugar, flour, and salt to create a rich shortbread crust. The dough presses into a parchment-lined pan and bakes until it is firm and pale. Separately, eggs, fresh lemon juice, granulated sugar, and flour are blended until frothy, forming the lemon filling. This mixture is poured over the baked crust and returned to the oven until the filling firms up but still retains a slight softness characteristic of lemon bars.

The finished bars have a buttery, soft base with a bright, tangy lemon topping that is balanced by sugar and a light dusting of powdered sugar for sweetness and texture contrast. They are sliced into squares, making for easy serving and sharing as a dessert or snack.

This recipe lends itself well to serving chilled or at room temperature and can be stored for a few days to allow flavors to meld.
