The Best Enchilada Sauce Recipe
Description
The Best Enchilada Sauce Recipe uses a base of canned tomato sauce combined with minced garlic, chipotle chilis in adobo sauce, and Mexican spices like chili powder and cumin for a smoky, moderately spicy flavor profile. The garlic is briefly sautéed in olive oil to soften its pungency and enhance aroma before liquids and spices are added.
Simmering the sauce uncovered allows flavors to concentrate and the sauce to thicken slightly while maintaining a consistency suitable for spooning or pouring over enchiladas. Salt and freshly ground black pepper provide balance.
This sauce is versatile for Mexican dishes needing a flavorful yet smooth sauce layer. It can be prepared ahead and stored until needed.
Ingredients
- 1/2 tsp olive oil
- 4 garlic minced, cloves
- 1 -1/2 cups chicken broth reduced sodium or vegetable broth
- 3 cups tomato sauce canned
- 2 tablespoons chipotle chilis in adobo sauce (chopped (to taste))
- 1 tsp chili powder or more to taste, Mexican hot
- 1 tsp cumin ground
- 1/2 teaspoon kosher salt
- black pepper to taste, fresh
Instructions
- Heat a saucepan over medium heat, add the oil and garlic; sauté until golden, about 1 minute. Add the chicken broth, tomato sauce, chipotle chiles, hot chili powder, cumin and salt and pepper, to taste. Bring to a boil then reduce the heat to low and simmer, uncovered for 7-10 minutes. Set aside until ready to use. Makes 4 cups.
