Description

This gingerbread house icing begins by whisking egg whites until frothy, then flavoring them with almond extract (or vanilla or peppermint). Powdered sugar is added gradually on low speed to avoid lumps, then the mixture is whipped on high speed for 7 to 10 minutes until stiff peaks form. The stiffness ensures the icing sets firmly and supports the construction of gingerbread house pieces.

The icing should be used immediately after preparation for best consistency and adhesion. If storing, it can be kept in an airtight container with plastic wrap pressed directly onto the surface to prevent crust formation and drying out.   • 2 egg white
  • 1 teaspoon almond extract (or vanilla or peppermint extract)
  • 5 cups powdered sugar plus more as needed

Instructions

  1. Whisk the egg whites in a stand mixer on medium speed until frothy. (You can also do this in a mixing bowl with a hand mixer.)
  2. Add in almond extract or extract of your choice.
  3. Add the powdered sugar 1 cup at a time on low speed. Make sure to scrape down the sides of the bowl periodically.
  4. Once all the sugar has been combined, increase the speed of the mixer to high and whisk for 7 to 10 minutes. Stiff peaks should form and when you run a knife through the icing the path of the knife should hold.
  5. Fill a piping bag with the icing and use it immediately for the best results. (see note)

Notes

  • Store leftover icing in an airtight container with plastic wrap touching the surface to prevent it from drying out and forming a crust.
  • For best results, use the icing immediately after making to avoid changes in consistency.
