We could all use a sweet loaf to have after dinner or for the season where is so cold and use need a nice cozy dessert to eat. This Gingerbread Loaf Recipe is a great loaf to share with your friends and family and this may become a favorite.

Gingerbread loaf ingredients

  • 1/2 C unsalted sweet cream butter softened
  • 1 C sugar
  • 1/2 tsp pure vanilla extract
  • 1 large egg
  • 1 C unsweetened applesauce
  • 1 1/2 C flour
  • 1 tsp baking soda
  • 2 tsp ground ginger
  • 2 tsp ground cinnamon
  • 1 tsp ground cloves
  • 1/2 tsp ground nutmeg

Cream cheese frosting

  • 4 oz cream cheese softened
  • ¼ C unsalted sweet cream butter softened
  • 1 tsp pure vanilla extract
  • 1 1/2 -2 C powdered sugar
  • 2 C crushed gingersnap cookies

Instructions

Gingerbread Directions:

  1. Preheat the oven to 350 degrees and spray a bread pan with Pam baking spray
  2. Using a large bowl, beat together the butter, sugar, vanilla and egg until combined
  3. Beat in the applesauce
  4. In a large bowl, whisk together the flour, baking soda, ginger, cinnamon, cloves and nutmeg
  5. Gradually beat it into the wet ingredients until combined
  6. Pour the batter into the prepared loaf pan.
  7. Bake in the oven for 55-65 minutes or until a toothpick comes out clean
  8. Set aside the loaf on the wire rack to cool completely.

Frosting Directions:

  1. Using a standing mixer, beat together the cream cheese and butter until combined and smooth
  2. Beat in the vanilla extract
  3. Gradually beat in the powdered sugar until combined and smooth
  4. Place the loaf onto the wire rack
  5. Evenly spread the cream cheese frosting onto the loaf
  6. Sprinkle with the crushed gingersnap cookies
  7. Enjoy!
