The Best Healthy Pumpkin Banana Bread

Healthy Pumpkin Banana Bread is made with Greek yogurt and is so soft. With chocolate chunks and pecans, this bread is completely irresistible!

Ingredients

  • 2 egg Room tempreture
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract
  • 2/3 cup banana mashed
  • 1/2 cup pumpkin puree
  • 1/2 cup Greek yogurt
  • 1 1/2 cup all-purpose flour
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 cup pecans chopped
  • 1/2 cup pecans halves
  • 1/2 cup chocolate chips or chunks

Instructions

  1. Preheat the oven to 350F. Line a loaf pan with parchment paper or coat with non stick spray. 
  2. In a large bowl, mix the eggs, sugar and vanilla until light in color. 
  3. Add in mashed bananas and pumpkin puree. Mix again until fully combined. 
  4. Add in yogurt and mix well. 
  5. In a medium bowl, whisk together the flour, baking powder and cinnamon. 
  6. Add the dry ingredients to the wet ingredients and fold using a wooden spoon. Don't over mix. 
  7. Fold in chopped pecans. 
  8. Pour the batter into the loaf pan and top with pecans and chocolate chips. 
  9. Bake in the oven for 45 minutes to one hour until a toothpick inserted into the bread comes out clean. 
  10. Let cool for 20 minutes before slicing.
