The BEST Homemade Tiramisu

The BEST Homemade Tiramisu features a silky mascarpone cream lightened by whipped egg yolks and whites, layered with coffee-soaked ladyfingers. The careful folding technique preserves a creamy, airy texture. Coffee quality and soaking time are key because they directly influence the flavor and texture of the ladyfingers and final dessert.

Description

This tiramisu recipe focuses on crafting a smooth mascarpone cream by beating egg yolks with sugar until doubled in volume, and separately whipping egg whites with sugar to firm peaks. These are gently folded into mascarpone to maintain a light consistency. Ladyfingers are dipped briefly into cooled coffee to infuse flavor without becoming soggy or breaking apart. The dessert is assembled by layering the mascarpone cream and soaked ladyfingers, then chilled until set.

The flavor centers on rich mascarpone balanced with the coffee's bitterness and subtle sweetness from sugar. The texture is airy yet creamy, with the ladyfingers providing a tender bite without being mushy thanks to controlled soaking.

Tiramisu is best served chilled and can be dusted with cocoa powder before serving for added aroma and decoration. It offers a classic coffee-flavored dessert suitable for special occasions or after dinners.

Let the mascarpone soften slightly before mixing to ease whipping. Use quality coffee for soaking ladyfingers to ensure a balanced flavor. Avoid over-soaking the ladyfingers to prevent them from falling apart or tasting overly bitter.

Ingredients

Servings

Mascarpone Cream

  • 8.8 oz mascarpone cheese 250 g
  • 2 egg 2 yolks, 1 egg white
  • ¼ cup granulated sugar

Soaked Ladyfingers

  • ¾ cup coffee 180ml, prepared and cooled
  • 20 ladyfingers

Optional Decoration

  • 1 tbsp cocoa powder
  • coffee coffee grains

Instructions

Mascarpone Cream

  1. Separate the yolks from the egg whites. You will only use 1 egg white and 2 two yolks for this recipe.
  2. Mix half of the sugar with the egg yolks and beging beating with a hand mixer until whipped. Sugar should be dissolved, and the volume of the mixture should nearly double in size. Set aside.
  3. Mix the other half of the sugar with the egg white and repeat the process. This time, use the whisk attachment for whipping. The volume should increase much more. You will know it is ready when you remove the whisk from the mixture, and the egg white still sticks to it.
  4. In a large mixing bowl, beat the mascarpone.
  5. Add the whipped yolks.
  6. Mix until well combined.
  7. Add the whipped egg white and combine, slowly folding it in with a spatula in a circular motion.
  8. It's important to use a folding motion to add air into the final mixture. You will get a creamy and delicious mascarpone cream.

Soaked Ladyfingers

  1. Dunk the ladyfingers into the cooled coffee, soaking them each for about 5 seconds.

Assemble Tiramisu

  1. Start placing the first layer of ladyfingers in the bottom of an 8” springform pan. You will have to break some ladyfingers to fill in any small gaps.
  2. Once the first layer of soaked ladyfingers is complete, use a spoon to spread half of your mascarpone cream over the top.
  3. Repeat the process for another layer of ladyfingers and another layer of cream. (You can do more or less layers, as you prefer.)
  4. Chill tiramisu in the fridge for about 3 hours. Remove the springform pan from the sides. You can use a butter knife to loosen the edges if needed, then just smooth the sides back out.
  5. Dust lightly with cocoa powder or coffee grains for decoration if desired.

Notes

  • Remove mascarpone from the fridge 10 minutes before use to ease whipping and ensure smooth texture.
  • Choose quality coffee for soaking the ladyfingers, as it significantly impacts the tiramisu's overall flavor.
  • Do not oversoak the ladyfingers; quick dipping avoids sogginess and excessive bitterness.
