The Best No-Bake Cheesecake Recipe
Description
This cheesecake recipe starts with beating softened cream cheese until smooth, then incorporating powdered sugar, vanilla extract, and lemon juice to create a balanced, tangy sweetness. Sour cream is added for extra creaminess and slight acidity. Separately, heavy cream is whipped until stiff peaks form and folded carefully into the cream cheese mixture to lighten the texture. The resulting filling is spread evenly over a prepared graham cracker crust, then refrigerated for at least four hours or overnight to set firmly.
The no-bake approach results in a cheesecake with a creamy consistency that contrasts the firm, crumbly crust. The lemon juice adds brightness, and the optional whipped cream topping adds a soft, airy finish. This cheesecake is suitable for those preferring lighter desserts or an easier alternative to baked cheesecakes, offering a rich flavor and smooth mouthfeel without the heat of oven preparation.
