The BEST Oatmeal Cookie Recipe (no Raisins)

This oatmeal cookie recipe creates tender cookies with a subtle chewiness from rolled oats and a balance of brown and granulated sugars. Butter and eggs provide a rich base, while optional cinnamon adds warmth to the spiced flavors. The dough yields cookies with golden edges and soft centers, baked at a moderate temperature to ensure even cooking. This classic oatmeal cookie is versatile, allowing additions like raisins or chocolate chips to customize texture and taste.

Description

The BEST Oatmeal Cookie Recipe (no Raisins) starts with creaming softened salted butter with both brown and granulated sugars to build flavor and texture. Eggs and vanilla blend in for moisture and aroma. Dry ingredients including all-purpose flour, baking soda, baking powder, salt, and optional cinnamon combine to form the structure. Rolled oats add texture and chew, distinguishing these cookies. The dough is portioned onto parchment-lined baking sheets and baked until the edges are golden but centers remain soft.

This baking method produces cookies with a lightly crisp exterior and tender middle, balancing chewiness and softness. Adjustments for oatmeal raisin or chocolate chip variations are straightforward, simply adding mix-ins before baking. Using salted butter enhances the flavor, but unsalted butter can be substituted with increased salt. Cooling cookies briefly on the pan before transfer helps them set properly.

Ingredients

Servings
  • 1 cup butter softened, salted
  • 3/4 cup light brown sugar packed
  • 1/2 cup granulated sugar
  • 2 large egg
  • 2 teaspoon vanilla extract
  • 2 1/4 cups rolled oats
  • 1 3/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon optional (not in my original recipe)

Instructions

  1. Preheat the oven to 325° F. Line two light-colored baking sheets with parchment paper and set aside.
  2. In a large bowl or the bowl of a stand mixer, cream butter with white and brown sugar until it becomes lighter in color and fluffy, about 3-4 minutes.
  3. Add large eggs and vanilla extract. Mix until smooth.
  4. In a separate bowl, whisk together the dry ingredients (flour, baking soda, baking powder, and salt). If you love cinnamon in your oatmeal cookies (not in my original recipe), add that here now as well.
  5. Gradually mix the flour mixture into the wet ingredients on medium speed.
  6. Stir in old-fashioned oats and any mix-ins like chocolate chips or sweet raisins if you're using.
  7. Using a medium cookie scoop, scoop cookie dough balls onto the lined baking sheet.
  8. Bake for 9-12 minutes or until the edges are golden brown and the centers are soft but not gooey.
  9. Cool for 5 minutes on the hot baking sheet before transferring to cooling racks. Store in airtight containers for up to 3 days.

Notes

  • Use salted butter for optimal flavor or unsalted butter with 1 teaspoon added salt.
  • Add 1 cup raisins and 1 teaspoon cinnamon for oatmeal raisin cookies.
  • For oatmeal chocolate chip cookies, incorporate 1 to 1½ cups chocolate chips into the dough.
