The Best One Bowl Fudgy Brownies

Rich, fudgy brownies made in a single bowl by combining melted butter, sugar, eggs, vanilla, cocoa powder, flour, and salt, folded with generous chocolate chunks. The batter is baked in a 9x13 pan and topped with extra chocolate chunks for a deeply chocolatey treat with a chewy, moist texture and occasional gooey chocolate pockets.

Description

The Best One Bowl Fudgy Brownies come together by melting butter and mixing it with both granulated and brown sugars to create a smooth, non-grainy base. Eggs and vanilla are incorporated before folding in cocoa powder, flour, and salt for a balanced batter. Chocolate chunks folded into the mixture and sprinkled on top provide melting pockets of rich chocolate distributed throughout the brownies.

Baked at 350°F for about 23-30 minutes, the brownies develop a slightly crisp edge with a moist, fudgy center. Cooling before cutting allows the structure to set. Use of chocolate bars cut into chunks rather than chips encourages melting and gooeyness, although either works.

These brownies suit casual dessert occasions and can be served on their own or with a light dusting of sea salt for contrast.

Sweetness can be adjusted by varying sugar quantities, with more sugar yielding sweeter brownies.

Ingredients

Servings
  • 1 cup butter melted, unsalted
  • 1 1/2 cups sugar 1 3/4 cup for sweeter brownies
  • 1 cup brown sugar
  • 4 large egg
  • 2 teaspoons vanilla extract
  • 1 1/4 cups flour
  • 1 cup cocoa powder unsweetened
  • 1 teaspoon salt
  • 1 1/2 cups chocolate chunks divided

Instructions

  1. Preheat oven to 350 degrees. In a large, microwave-safe bowl, melt butter. Remove from the microwave and stir in sugar and brown sugar until dissolved. Make sure to take time to stir well to remove all graininess from the sugars. Stir in eggs and vanilla.
  2. Fold in flour, cocoa powder, and salt. Fold in 1 cup of chocolate chunks, reserving 1/2 cup to sprinkle on the top.
  3. Pour into a lightly sprayed 9 x 13 baking pan. I prefer to line the baking pan with parchment paper for easier cutting. Spread batter evenly in the pan. Sprinkle with remaining 1/2 cup of chocolate chunks.
  4. Bake for 23-30 minutes. Remove from oven and let cool for at least 10-15 minutes before cutting into pieces. If you prefer, sprinkle with Maldon sea salt flakes.

Notes

  • For more melting chocolate pockets, use chopped chocolate bars instead of chocolate chips.
  • Adjust sugar amount for preferred sweetness; 1 3/4 cups sugar will make sweeter brownies.
