The Best Strawberry Banana Cake
Description
This cake recipe blends mashed ripe bananas and chopped strawberries into a batter with flour, cinnamon, and leaveners for lift. Butter and sugars are creamed together before adding eggs, vanilla, and buttermilk, creating a moist and rich base with a pleasant balance of sweetness and acidity. The inclusion of nuts introduces texture contrasts, while the lemon juice in the fruit mix adds brightness.
Baked at 325 degrees in a deep 9 x 13 inch pan, the cake rises slowly ensuring even cooking with a soft crumb and moist interior. After cooling, it is topped with a smooth cream cheese buttercream frosting, made from butter, softened cream cheese, and icing sugar, tying together the fruit and spice flavors.
The cake can be decorated with additional fresh strawberries and nuts to enhance its presentation and textural layers. Its balance of fruity, nutty, and creamy elements makes it a satisfying dessert that pairs well with tea or coffee.
It is important to use a deep enough pan to avoid overflow and to mix the batter gently after adding the fruit to preserve its texture.
Ingredients
For the Cake:
- 1 ½ cups banana mashed, ripe, very ripe
- 1 ½ cups strawberry fresh, diced
- 1 tablespoon lemon juice
- 3 cups flour
- 2 teaspoons cinnamon ground
- 1 ¼ teaspoons baking soda
- 1 teaspoon baking powder
- ½ teaspoon salt
- ¾ cup butter room temperature
- 1 cup sugar
- 1 cup brown sugar packed
- 3 large egg
- 2 teaspoons vanilla
- 1 ½ cups buttermilk
- ½ -¾ cup walnuts or pecans, chopped, if desired
Cream Cheese Buttercream Frosting
- ½ cup butter room temperature
- 1 pkg (8 oz) cream cheese softened
- 4 cups icing sugar
Decorations
- ¼ -½ cup walnuts or pecans, chopped
- 6-10 large strawberry fresh, sliced or diced
Instructions
For the Cake:
- Preheat your oven to 325 degrees. Prepare your 9 x 13 inch pan with grease and flour. Set aside.
- In a small bowl combine mashed bananas, cinnamon and lemon juice and set aside.
- In a medium bowl combine flour, baking soda, baking powder and salt. Set aside.
- Using a handheld or stand mixer beat the butter and sugars on high speed until smooth and creamy, a few minutes. Scrape down the sides of your bowl as necessary.
- Add eggs and vanilla. Beat on medium speed until combined. Add dry ingredients, alternating with the buttermilk.
- Once incorporated gently add in your mashed bananas and strawberries with a wooden spoon. Do not over mix. The batter will be thick and a little lumpy. This is ok.
- Pour your batter into your prepared pan and bake for 60 minutes or until a toothpick inserted into the center comes out clean.
- Allow cake to cool in the pan for between 5 and 10 minutes before dumping on to a rack to cool completely.
Cream Cheese Buttercream Frosting
- Cream butter and cream cheese until smooth using your mixer.
- Gradually add icing sugar and beat on low to medium speed until combined.
- Once icing is well blended spread all over your totally cool cake. That does sound funny every time I say it.
- Decorate top of iced cake with nuts and strawberries if desired!
- Serve and enjoy every bite!
Notes
- Use a 9 x 13 inch cake pan that is at least 2 ¼ inches deep to prevent batter overflow.
- Gently fold in the strawberries and bananas to maintain the batter's texture and avoid overmixing.
- Allow the cake to cool completely before frosting to ensure the buttercream sets properly.
