The Best Strawberry Cookie Pizza Recipe

The Best Strawberry Cookie Pizza combines a sugar cookie base with a creamy goat cheese and honey spread topped with fresh strawberry slices. The crust bakes to a golden finish, offering a tender and slightly crisp texture. The tangy goat cheese and honey balance the sweetness of the cookie, while the fresh strawberries provide juicy freshness. It’s an appealing dessert for those who enjoy a cookie with a fruit topping rather than traditional icing. Best served soon after assembly to maintain the cookie's crispness beneath the moist toppings.

Description

The Best Strawberry Cookie Pizza Recipe starts with a sugar cookie dough pressed evenly onto a baking sheet and baked until golden. While the base cools slightly, a smooth mixture of softened goat cheese and honey is spread over the warm crust. Fresh strawberries are hulled and thinly sliced, then carefully layered over the cheese spread to create full coverage. The fresh strawberries contribute a bright, juicy element that contrasts with the creamy and slightly tangy topping. The cookie provides a soft and lightly crisp foundation that holds the toppings well.

The dessert is typically served right after assembling to ensure the cookie base remains firm and not soggy from the moist toppings. It can be sliced and eaten like a pizza, making it fun and approachable. This treat works well for casual gatherings or as a fresh alternative to traditional frosted cakes.

You can prepare the cookie dough and goat cheese mixture ahead of time, storing both in the fridge or freezer. However, it's important to slice and arrange the strawberries on the day of serving to keep them fresh. Leftovers should be refrigerated and consumed within a day, though the cookie base may become softer as it absorbs moisture from the toppings over time.

Ingredients

Servings
  • 1 1/2 cups all-purpose flour
  • 3/4 teaspoon baking powder
  • 3/4 teaspoon salt
  • 12 tablespoons unsalted butter softened (1 1/2 sticks
  • 3/4 cup granulated sugar
  • 1 egg large
  • 2 teaspoons vanilla extract
  • 12 ounces goat cheese softened, chevre
  • 1/4 cup honey
  • 1 1/2 pounds strawberry fresh

Instructions

  1. Preheat the oven to 375 degrees F. Line a 10x15-inch rimmed baking sheet with parchment paper and set aside.
  2. Using an electric mixer, cream the butter and sugar together until light and fluffy. Then scrape the bowl and add the egg and vanilla. Beat again to combine. Then with the mixer running, slowly add the flour, baking powder, and salt. Scrape the bowl and beat again until smooth.
  3. Dump the cookie dough out onto the prepared baking sheet. Use your hands to press the dough out evenly from corner to corner. Bake for 10-12 minutes until golden.
  4. Meanwhile, mix the softened goat cheese and honey together until smooth. Once the cookie base comes out of the oven, allow it to cool for 5 minutes, then spread the goat cheese evenly over the base while it's still a little warm.
  5. Hull the strawberries and slice into thin pieces. Start at one end and line the strawberry slices across the pizza, overlapping each row for complete coverage. Cut and serve immediately, or cover and chill until ready to serve.

Notes

  • Prepare the sugar cookie dough in advance by refrigerating or freezing before baking; thaw if frozen before use.
  • The goat cheese and honey mixture can be made and refrigerated for up to one week.
  • Use fresh strawberries for assembly on the day of serving to maintain freshness and texture.
  • Store assembled pizza in an airtight container in the fridge and consume within a day to avoid sogginess.
