Ingredients

Servings
  • ½ cup butter room temp
  • ¼ cup vegetable oil
  • ½ cup granulated sugar plus more for rolling dough
  • ½ cup powdered sugar
  • ¼ cup chai tea concentrate
  • 1 egg large
  • 1 tablespoon vanilla extract
  • 1 chai tea leaves bag
  • ¼ teaspoon allspice
  • 2 ¼ cups all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon salt

Frosting:

  • 2 cup powdered sugar
  • 1 teaspoon nutmeg
  • 1 teaspoon vanilla
  • 6 tablespoons heavy whipping cream

Instructions

  1. In a large bowl using a hand mixer, or a stand mixer fitted with the paddle, whip your butter until it is light and fluffed.
  2. Add the oil and beat until it’s mostly incorporated, the oil will not completely mix with the butter.
  3. Add sugar, powdered sugar, chai tea concentrate, egg, and vanilla. Mix again until all are incorporated.
  4. Add the chai tea leaves and allspice, mix in.
  5. Lastly add the flour, baking soda, and salt. Mix until it’s all combined. Your dough will be soft.
  6. Scoop dough out at about 2 tablespoons size, round into balls and roll in sugar.
  7. Place on a baking sheet lined with parchment paper and refrigerate for an hour.
  8. Preheat oven to 350℉ and bake cookies for 8-12 minutes. After removing from the oven allow cookies to sit on the hot panfor at least 5 minutes. Remove from pan and let the cookies cool completely on a cooling rack.

Frosting:

  1. Whip all the ingredients together with a hand mixer, until all ingredients are well incorporated.
  2. Once the cookies have cooled completely, dollop a spoon of frosting on each cookie and spread lightly with the back of the spoon.
