The Pioneer Women's Blackberry Cobbler
Description
The Pioneer Women's Blackberry Cobbler features a straightforward batter made with sugar, self-rising flour, milk, and butter, baked with a layer of blackberries on top. The berries, whether fresh or kept frozen until baking, seep into the batter as it cooks, creating a moist, fruit-studded interior beneath a gently crisped top. The method of sprinkling sugar before and after baking results in delicate caramelization on the surface, adding texture and sweetness. The cobbler's tender crumb and juicy blackberries make it an agreeable dessert that pairs well with vanilla ice cream or served on its own as a cozy finish to a meal.
The recipe invites substitutions of other berries or stone fruits like blueberries, raspberries, or peaches, allowing seasonal flexibility. Adjustments to flour can be made using homemade self-rising flour if preferred.
For a more pronounced berry presence near the surface, some berries can be reserved and added partway through baking, a tactic that helps fruit retain shape and place in the final cobbler.
Ingredients
- 1 1/4 cups sugar separated, 2 tablespoons
- 1 cup self-rising flour see notes for easy homemade version
- 1 cup milk any kind, whole is best
- 1/2 tick butter melted. (equal to 4 tbsp.)
- 2 cups blackberries rinsed and patted dry, fresh or frozen
- vanilla ice cream for serving
Instructions
- Note: If using frozen berries, be sure to add them when they're frozen. If you let them thaw, they'll be mushy, and the consistency will be off.
- Preheat the oven to 350 degrees.
- Combine 1 cup of sugar with the flour in a large bowl.
- Stir in the milk, then the melted butter. Mix until well-combined.
- Pour onto the bottom of a greased 9 x 9 inch baking dish.
- Distribute the berries throughout the top. They’ll sink in further as they bake.
- Sprinkle ¼ cup sugar over the top, reserving 2 tablespoons for later.
- Bake for 50 minutes. Remove from the oven and sprinkle remaining 2 tablespoons sugar on top.
- Bake for 10 minutes, or until the top is golden brown.
- Serve immediately, (with ice cream of course)!
Notes
- Homemade self-rising flour can be made by combining 1 cup all-purpose flour with 1/2 teaspoon salt and 1 1/2 teaspoons baking powder.
- Frozen blackberries should be added frozen to the batter to avoid a mushy texture; thawed berries can negatively affect the cobbler's consistency.
- Reserve some berries to add halfway through baking if you prefer fruit closer to the surface.
- Try substituting with blueberries, raspberries, strawberries, or peaches for variation.
