Description
This recipe starts with slices of sourdough bread no thinner than a centimeter, buttered on one side. A blend of Emmental, mozzarella, and Parmesan cheese is evenly placed on the non-buttered sides of both bread slices, creating an even distribution of cheese upon assembly. The sandwich is cooked in a pan with melted butter over very low heat.
Cooking involves placing the open-faced, cheese-topped bread under a lid to trap heat and encourage the cheese to soften and become pliable without burning the bread. Once the cheese starts to wilt, the slices are flipped together, cheese sides facing each other, and grilled like a traditional sandwich to melt the cheese thoroughly and toast the bread.
This approach ensures an even melt and prevents undercooked cheese or overly toasted bread. The final sandwich offers a crispy exterior with a rich, creamy interior where three cheeses combine to create depth in flavor and texture, suitable for a filling snack or light meal.
The method emphasizes patience and low heat to achieve perfect melting and toasting. Using cheese on both slices helps cheese soften before closing the sandwich, preventing cold or clumped cheese.
Ingredients
- 2 lices sourdough bread sliced no thinner than 1cm/0.4"
- 1 tablespoon butter spreadable consistency, salted, or more if needed
- 40 grams Emmental cheese or to taste. Freshly grated, or Cheddar or Gouda, 1½ oz
- 40 grams mozzarella cheese or to taste. From a ball of mozzarella, thinly sliced, 1½ oz
- 1 tablespoon Parmesan Cheese or to taste. Grated parmesan works too, shavings
Instructions
- Slice the bread into medium-thick slices. Grate the Emmental (or your chosen cheese). Drain, dry and finely slice the mozzarella.
- Spread a generous amount of butter on two slices of bread, making sure to cover the entire surface from edge to edge. Then, flip the slices over, placing the buttered side down.
- Generously sprinkle both slices, on the dry sides, with freshly grated Emmental cheese (or your chosen cheese).
- Evenly distribute slices of thinly sliced mozzarella on top of the grated cheese.
- Finish it off by topping the mozzarella slices with parmesan shavings or a sprinkle of grated parmesan.
- Melt a small knob of butter (about a teaspoon) in a pan over low heat.
- Once the butter has melted, position the two slices of bread, cheese side up, side by side in the pan.
- Place a lid on the pan and continue to heat the bread over low heat for roughly 1.5-2 minutes. See note 1
- As soon as some of the grated cheese starts looking a bit limp from warming, go ahead and remove the lid.
- Flip one slice onto the other so that the cheese faces each other. Give it a gentle press with a spatula to 'glue' the cheese together.
- Continue frying the bread over very low heat, turning frequently until both sides are toasted to a golden brown colour, the cheese has fully melted and is just starting to ooze out from the edges.
- Scrape off any grilled cheese that landed in the pan and serve together with the grilled cheese sandwich (flavour!).
Notes
- Use low heat and a lid to ensure cheese melts gently without burning the bread.
- Distribute cheese evenly on both slices to promote even melting before assembling.
- Flip the sandwich only after the cheese shows signs of softening for best results.
- Keep the bread slice thickness about 1 cm to balance crispiness and melting.
