Ingredients

  • 1/3 cup soy sauce
  • 1/4 cup water
  • 2 tablespoons mirin or sherry or Marsala
  • 1 tablespoon rice wine vinegar or apple cider vinegar
  • 1/4 cup granulated sugar 50g
  • 3 tablespoons brown sugar 37g
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ground ginger
  • 1 1/2 teaspoon cornstarch whisked with 1 tablespoon water

Instructions

  1. In a medium saucepan, over medium-high heat, combine all ingredients. Bring to a simmer, watching closely to make sure sauce does not begin to boil over. 
  2. Once at a simmer, turn heat down to medium to keep it there. Simmer for 5 to 10 minutes, stirring occasionally, until thickened. (Sauce will thicken further as it cools.)
  3. Cool sauce slightly before using and enjoy.

Notes

  • Store leftover teriyaki sauce in an airtight container in the refrigerator for later use.
