Three Bean Tacos
Description
This recipe prepares a warm, hearty taco filling by cooking diced red onion and red and yellow bell peppers in olive oil until softened. Three types of rinsed canned beans—black, pinto, and kidney—are added along with chopped cilantro and fresh lime juice. Taco seasoning enhances the savory flavor, balanced with salt and black pepper.
The filling is spooned into heated taco shells and topped with shredded cheese, lettuce, chopped tomatoes, avocado, and either sour cream or Greek yogurt, allowing for creamy and fresh textural contrasts. The tacos can also be made using flour or corn tortillas as alternatives.
The bean mixture provides a protein-rich, colorful filling with a mix of textures from the vegetables and beans, suitable for vegetarian taco options.
