Tiger boba- Tiger Milk Tea

Tiger Milk Tea highlights brown sugar tapioca pearls cooked and caramelized into a thick syrup, layered at the bottom of a glass to create characteristic 'tiger stripes' when milk is added. The drink combines chewy boba with creamy whole milk for a sweet and textured beverage popular as bubble tea or dessert topping.

Description

The recipe involves boiling tapioca pearls in a large volume of water according to package instructions, often around 5 to 20 minutes depending on the type. After cooking, the pearls are rinsed and mixed with brown sugar. The mixture is then simmered gently until bubbles form and a thick brown sugar syrup coats the pearls, creating a rich caramelized flavor and sticky texture.

These brown sugar boba pearls are spooned into a glass, using a spoon to coat the inner glass surface with the syrup, forming the visual signature 'tiger stripes.' Whole milk is poured over the pearls to complete the drink, which is stirred before consuming to blend the creamy milk with the sweet syrup and chewy pearls.

The drink is served chilled or at room temperature and can also be used as a topping for various desserts or other bubble tea variations. The rich sweetness of the brown sugar syrup balances the plain milk, while the tapioca pearls add a chewy contrast.

Nutrition details estimate a serving around 500 ml with 3 tablespoons of tapioca pearls, with one batch yielding enough for multiple drinks. Adjust sugar and milk quantities as desired.

Ingredients

Brown sugar boba with brown sugar syrup

  • 1/4 cup tapioca pearls already mixed with brown sugar, cooked
  • 3/4 cup brown sugar
  • water as needed

Assemble

  • 1 cup milk whole

Instructions

Cook the boba pearls

  1. Bring 8 times of water to a boiling and then place tapioca pearls. Read the instruction on the package (find the required time). It may be 20 minutes or 5 minutes. Cover the lid, turn off the fire and let it rest for another required time.
  2. Rinse the boba pearls under running water. Then mix the boba pearls with brown sugar.
  3. Add around ¾ cup of brown sugar in a pot, then place the boba pearls in. No need to add water. Slow down the fire and stir from time to time to avoid being sticky.
  4. Cook for 3-4 minutes until there are large bubbles and a thick brown syrup is formed. Now our brown sugar boba pearls are ready for all types of bubble tea, milk tea, latte, or even as toppings for desserts.

Assemble

  1. Then place the caramelized tapioca pearls at the bottom of your boba glass. Take your spoon and rub the pearls against the glass to coat it in the caramelized brown sugar syrup and create the tiger stripes.
  2. Fill the glass with milk. Stir for around 10 times and enjoy!

Notes

  • Use the cooking time on the tapioca package; it varies by type and size of pearls.
  • Caramelize the cooked pearls with brown sugar by simmering until syrup thickens and bubbles form for proper flavor and texture.
  • Rub the brown sugar syrup on the inside of the glass to create the characteristic tiger stripes effect.
  • Serve with whole milk and stir well before drinking to combine flavors and textures.
  • A batch of this recipe can prepare enough pearls for about 4 glasses of tiger boba milk tea.
