TikTok Baked Feta Pasta

This amazing Baked Feta Pasta recipe has been a Tiktok sensation, and for good reason! It's so simple to make, filled with cherry tomatoes, fresh garlic, and fresh basil, in a creamy feta sauce

Ingredients

  • 2 pints cherry tomato 20 ounces
  • ½ cup extra virgin olive oil
  • 2 garlic smashed, cloves
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper freshly ground
  • Pinch of red pepper flakes (optional)
  • 1 (8-ounce) block feta cheese drained
  • 8-10 ounces rigatoni pasta cavatappi, penne, farfalle, or similar
  • ¼ cup basil leaves + more for garnish, fresh, thinly sliced

Instructions

  1. Preheat the oven to 400°F.
  2. Combine tomatoes, olive oil, smashed garlic cloves, salt, black pepper, and red pepper flakes in a baking dish. Toss to coat. Place feta cheese in the middle of the tomatoes.
  3. Bake for 40 minutes until the tomatoes have burst and the feta has softened.
  4. Meanwhile, cook pasta in a large pot of salted, boiling water until al dente, according to package directions. Reserve ½ cup pasta water as you drain the pasta.
  5. When the tomatoes are done, remove the baking dish from the oven and add the fresh basil leaves.
  6. Smash the tomatoes and feta together to form a creamy sauce. Add the pasta and ½ of the pasta water. Stir well. Add more pasta water, if needed.
  7. Serve garnished with additional fresh basil.

Notes

  • Storage: Store leftovers in an airtight container in the refrigerator for up to 2 days. You can enjoy it cold or reheat it the next day for lunch!
  • Freezer: Freeze in Ziploc bags or freezer bags for up to 2 months. Defrost before reheating in the microwave or on the stovetop with added water if needed.
  • In the pictures in this post, I used some Fusilli Corti Bucati that I picked up from Trader Joe's.
