Description
Toad In The Hole blends cooked pork sausages and onions with a batter similar to Yorkshire pudding made from plain flour, eggs, milk, and water. The sausages begin cooking in the oven with onion and oil before the batter is poured over. When baked at high heat, the batter puffs up and crisps along the edges, encasing the sausages in a savory, soft pudding.
The cooking method requires maintaining a hot oven and avoiding opening the door during baking to allow proper rising. The dish combines the rich, flavorful sausages with the light, eggy batter and slightly sweet onions for a satisfying texture contrast.
This classic British dish is often served with gravy and vegetables. Using a metal tin is preferred over ceramic for better heat conduction and crispier results. Adding herbs like thyme with the onions can add subtle flavor notes.
Ingredients
- 8 pork sausages (about 50g/1.75oz each)
- 1 red onion sliced
- 2 tablespoon vegetable oil
- 150 g plain flour
- 3 egg medium
- 1 pinch salt sea salt
- 220 ml milk whole
- 2 tablespoon water
Instructions
- Preheat your oven to 200°C/180°C(fan)/400°F/Gas 6.
- Put 8 Pork sausages, 1 Red onion and 2 tablespoon Vegetable oil into a baking dish. Mix well and cook for 15 minutes.
- In a large mixing bowl, sift 150 g Plain flour, add 1 pinch Sea salt and crack in 3 Eggs.
- Whisk together to form a thick paste.
- Gradually add 220 ml Whole milk and 2 tablespoon Water, continuing to whisk, until a smooth batter is formed.
- Remove the sausages from the oven and pour the batter around them.
- Return to the oven for 30 minutes. Do not open the oven until the cooking has finished.
Notes
- Do not open the oven door for at least the first 20 minutes to prevent the batter from sinking.
- Use a metal baking tin rather than ceramic for a crisper pudding.
- Adding thyme with onions can impart extra flavor; remove before pouring batter.
- Some suggest adding mayonnaise to batter for higher rise, though it's optional.
