Ingredients

  • 500 g tomatillo husks removed, fresh
  • 2 jalapeño chilli or pickled, fresh
  • Coriander stalks can remain on, small handful
  • salt to taste
  • black pepper to taste
  • 4-6 spring onion green and white part, finely chopped
  • agave nectar totally optional and if required to taste, to sweeten
  • olive oil a drizzle, to serve

Instructions

  1. Put all the ingredients except the spring onions and olive oil in the bowl of a food processor and pulse until you have a fine salsa.
  2. Decant this into a bowl and stir in the spring onions and olive oil. Adjust the seasoning to taste.
