Tomato Basil Soup

This Tomato Basil Soup blends diced tomatoes, pesto, and aromatic herbs into a smooth, creamy soup with a hint of sweetness from sugar and richness from half and half. The pureed texture combines the freshness of tomatoes and basil with a silky finish, making it a comforting choice for a light lunch or appetizer. The use of store-bought pesto adds basil flavor without requiring fresh leaves, contributing to ease of preparation.

Description

Tomato Basil Soup uses canned diced tomatoes simmered with onion, garlic, and herbs, including thyme and bay leaf, to develop a flavorful base. Pesto sauce is added for a concentrated basil taste and umami notes. After simmering, the soup is pureed until smooth and enriched with half and half to add creaminess without heaviness. The sugar balances the acidity of tomatoes, while seasoning with salt and pepper adjusts the taste to preference.

The soup’s texture is velvety and smooth, suitable for serving hot as a starter or paired with crusty bread for a fuller meal. Its blend of ingredients creates a balanced flavor profile that melds savory, herbal, and mildly sweet elements.

Using an immersion blender allows easy processing directly in the pot, but a regular blender works as well. Adjusting the seasoning after blending ensures the flavors are well balanced. This recipe provides a straightforward approach to a classic tomato basil soup with a subtle twist from pesto.
