Tomato Bulgur Pilaf (Turkish Bulgur Pilavi)

Bulgur pilaf is a classic, hearty Turkish side dish made with peppers and onions, featuring a rich and satisfying tomato flavor.

Ingredients

  • 2 tbsp olive oil
  • 1 yellow onion diced
  • 1 red bell pepper seeded and diced
  • 2 tbsp tomato paste
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 1 1/2 cups bulgur wheat rinsed, coarse
  • 1 tbsp butter
  • 2 cups chicken stock or water

Instructions

  1. In a large saucepan add the oil over medium heat. Add the onion and cook for 2 minutes, then add the red bell pepper. Cook another minute before adding the tomato paste. Cook out the tomato paste for 2 minutes and season with salt and pepper.
  2. Add the bulgur wheat, butter and chicken stock, stirring to combine and bring to a boil.
  3. Turn heat to low and cover for 20 minutes, or until all liquid has been absorbed. Fluff with a fork and serve immediately.
