  • 400 g chicken breast

Marinade:

  • 2 tablespoon olive oil
  • 0.5 teaspoon chilli minced
  • 2 tablespoon tomato puree
  • 2 tablespoon red wine vinegar
  • sea salt
  • black pepper
  • 2 tablespoon basil chopped, fresh
  • 2 garlic crushed, clove

Instructions

  1. Mix all of the marinade ingredients together and set aside.
  2. Put the chicken breasts in a pan and pour over the marinade and leave for 30 minutes for the flavours to infuse.
  3. Preheat your oven to 200°C/400°F/Gas 6.
  4. Put in the oven for 25 minutes, until the chicken is cooked through. To cook on the BBQ, cook for 10 minutes, flipping half way.

Notes

  • Cutting chicken into chunks and threading onto skewers with vegetables and halloumi creates a flavorful BBQ option.
  • Prepare the marinade in advance and refrigerate the chicken until ready to cook for better flavor infusion.
  • For a smoky twist, substitute fresh chili with chipotle in adobo or add paprika.
