Tomato Feta Salad

A fresh summer salad loaded with tomatoes, peaches and strawberries.

Ingredients
- 2 cups (60g) baby spinach
- ½ pound (250g) cherry tomatoes halved
- 5 peaches washed and quartered
- ½ pound (250g) strawberries quartered
- ½ cup (75g) crumbled feta
- 2 tablespoons fresh chopped parsley
- 1 teaspoon sunflower seeds
Honey Mustard Dressing
- 2 tablespoons olive oil
- 1 teaspoon mustard
- 1 tablespoon honey
- 1 teaspoon garlic
- 1 tablespoon lemon juice

Instructions
- In a large salad bowl, combine the spinach, cherry tomatoes, peaches, strawberries, feta, parsley and sunflower seeds.
- In a small bowl, mix oil, mustard, honey, garlic and lemon juice to make the dressing.
- Pour the dressing over the salad and toss until the salad is well coated.
- Serve.
Notes
- Use fresh, ripe fruit for the best flavor.
- Don’t cut the fruit too small, or it will turn mushy.
- You can peel the peaches or leave the skin on. The choice is a personal preference.
- If prepping ahead, store the salad dressing separately and mix just before serving.
- Serve larger portions for a full meal or serve smaller portions as a side.
