Ingredients

Servings
  • 2 cups (60g) baby spinach
  • ½ pound (250g) cherry tomatoes halved
  • 5 peaches washed and quartered
  • ½ pound (250g) strawberries quartered
  • ½ cup (75g) crumbled feta
  • 2 tablespoons fresh chopped parsley
  • 1 teaspoon sunflower seeds

Honey Mustard Dressing

  • 2 tablespoons olive oil
  • 1 teaspoon mustard
  • 1 tablespoon honey
  • 1 teaspoon garlic
  • 1 tablespoon lemon juice

Instructions

  1. In a large salad bowl, combine the spinach, cherry tomatoes, peaches, strawberries, feta, parsley and sunflower seeds.
  2. In a small bowl, mix oil, mustard, honey, garlic and lemon juice to make the dressing.
  3. Pour the dressing over the salad and toss until the salad is well coated.
  4. Serve.

Notes

  • Use fresh, ripe fruit for the best flavor.
  • Don’t cut the fruit too small, or it will turn mushy. 
  • You can peel the peaches or leave the skin on. The choice is a personal preference. 
  • If prepping ahead, store the salad dressing separately and mix just before serving. 
  • Serve larger portions for a full meal or serve smaller portions as a side.
