Tomato Puff Pastry Tart
Description
The Tomato Puff Pastry Tart highlights the combination of flaky puff pastry and fresh tomatoes enhanced by two types of cheese, mozzarella and mature cheddar. The pastry forms a raised border that crisps in the oven, keeping the juicy tomatoes and melted cheese contained. The tomatoes contribute a tender, juicy texture contrasting with the crispy edges. The simple seasoning of sea salt and black pepper allows the natural flavors to shine while the optional addition of arugula and balsamic glaze provides a peppery and acidic note to finish.
This tart can be served warm or at room temperature as a starter, light lunch, or side dish. It pairs well with fresh greens or a simple salad to complement its buttery and cheesy profile.
Notes suggest adding pesto between tomatoes or incorporating ingredients like tomato puree, garlic, olives, or chili flakes to vary flavor. Brushing the pastry border with egg wash before baking enhances its crispness and color. Protein such as cooked shredded chicken or smoked salmon can also be added for a heartier option.
Ingredients
- 1 heet puff pastry
- 50 g mozzarella cheese grated
- 50 g cheddar cheese grated, mature
- 1 tomato thinly sliced, beef
- 6 cherry tomato halved
- 1 pinch sea salt
- 1 pinch black pepper
To serve:
- arugula optional, aka rocket
- balsamic glaze (optional)
Instructions
- Take 1 sheet Puff pastry out of the fridge for 15 minutes before rolling out.
- Preheat your oven to 220°C/200°C(fan)/425°F/Gas 7.
- Run a knife round the edge of the pastry, to make a 1 inch boarder. Add half the 50 g Mozzarella and half of the 50 g Mature cheddar to the pastry, keeping it inside the boarder.
- Add 1 Beef tomato and 6 Cherry tomatoes.
- Add the rest of the cheese and 1 pinch Sea salt and ground black pepper.
- Put into the oven for 25 minutes, until golden.
- Top with Rocket (arugula) and Balsamic glaze if using.
Notes
- Allow the puff pastry to soften slightly before rolling to prevent cracking.
- Maintaining a border around the filling helps the pastry puff and keeps the topping contained during baking.
- Brushing the pastry border with egg wash will encourage extra browning and crispiness.
- Pesto can be layered beneath the tomatoes to add herby flavor.
- Additional toppings like chopped olives, tomato puree, crushed garlic, or chili flakes can enhance flavor according to preference.
- For a more substantial dish, cooked shredded chicken or smoked salmon can be added with the cheese.
