This tomato ricotta toast is my favorite way to start the day. Crunchy toasted whole wheat sourdough spread with creamy ricotta cheese and topped with sun-ripened tomatoes, kosher salt, and black pepper. For an extra boost of flavor add some fresh basil leaves.

Ingredients
- 2 pieces whole wheat sourdough bread
- 4 tablespoons ricotta cheese
- 2-3 vine-ripened tomatoes thinly sliced
- kosher salt to taste
- black pepper to taste
- fresh basil leaves optional
Instructions
- Toast bread and spread each slice with 2 tablespoons of ricotta cheese.
- Top with sliced tomatoes and desired amount of kosher salt and black pepper.
- If desired add basil leaves.
