Tomato Risoni Salad (Tomato Orzo Salad)

This Tomato Risoni Salad (Tomato Orzo Salad) is a super simple salad that is packed with flavour and works as a side or a main meal. You can add extra veg, meat, cheese what ever you fancy to this salad. It is delicious and perfect for summer or winter!

Ingredients

Servings
  • cups orzo pasta (risoni)
  • 4 tablespoon extra virgin olive oil
  • 1 teaspoon onion powder
  • ¼ teaspoon smoked paprika
  • 2 garlic cloves
  • 2 cups cherry tomato
  • salt
  • black pepper
  • parsley chopped, small handful, fresh
  • basil chopped, small handful, fresh

Instructions

  1. Bring a large pan of water to a boil.
  2. Once you have a rolling boil salt it well (at least 1 tablespoon of salt) and add the pasta.
  3. Stir and then cook as per the packet instructions. (Check it 2 minutes before the packet suggests I find it cooks quickly!)
  4. Drain the pasta.
  5. Dress immediately with the extra virgin olive oil.
  6. Then mix through the onion powder, smoked paprika, salt and pepper.
  7. Grate/crush over the garlic.
  8. Stir well and set aside, covered to cool slightly.
  9. Chop the cherry tomatoes in half (or quarters if they are big)
  10. Stir the tomatoes and chopped herbs through the pasta.
  11. Taste and adjust your seasoning.
  12. Serve immediately or refrigerate until needed.
  13. Just remember to remove it from the fridge a little before you want to serve it as it is best served at room temperature.
