There's nothing like a juicy Tomato Salad to make all summer long! My grandpa used to make this Tomato Salad Recipe and load it with feta, fresh mint, oregano, and toasted pita chunks on the stove. It's a hearty, delicious, and comforting tomato feta salad like not other!

Ingredients
Tomato Salad
- 10 tomatoes quartered
- 1/4 cup fresh oregano and mint torn or roughly chopped
- 1/3 cup feta cheese chunks
- 1 shallot thinly sliced
- 1 tablespoon lemon juice
- 1 teaspoon salt sea salt
- 1/3 cup olive oil extra virgin
Crunchy Bread
- 1 pita bread torn into chunks
- 2 garlic cloves minced
- 2 Tablespoons oregano leaves minced
- 1/4 cup olive oil extra virgin

Notes
- Use fresh seasonal and ripe tomatoes for this recipe. Cherry tomatoes are also ok to use.
- Cutting the tomatoes into wedges or chunks matches the size of feta and bread so it's easier to serve the salad without mushing any ingredient.
- Make the bread ahead of time and once cooled, store it in a ziploc bag in the freezer for upto 3 months.
- The stove top bread is best to control the level of crunch you're looking for.
- Use fresh herbs of your choice, we love it the classic way with fresh mint and fresh oregano. However there are times I add or substitute with fresh parsley.
- Assemble the salad right before serving. It's a salad thats best served fresh!
- Dress it up with a simple lemon juice, salt and olive oil or explore other Dressings on the blog.
- Best to serve right away and enjoy the day of!
- Tomatoes are really rich in anti-oxidants, vitamin C and Vitamin K. And unlike creamy tomato salads, this one is an absolute load of pure tomatoes without the cream!
- Since this is a classic Mediterranean recipe, feta cheese was my cheese of choice. However you can find another hit of a tomato salad with mozzarella in this Caprese Salad. If you're making this dairy free or vegan, you can skip or use vegan cheeses.
- Again, I absolutely would suggest this recipe! It's heavily based on tomatoes and only tomatoes.
- Cherry tomatoes, large beef tomatoes, tomatoes on the vine and pretty much all tomatoes are unique in their own way. Today I've used on the vine as this is a family recipe and I didn't want to change a thing about it.
