Tomato Salad Recipe

This tomato salad is wonderful. Only 3 ingredients and you have a flavorful refreshing summer salad. It can be served as a side dish or as a salad.

Ingredients

  • 4 tomatoes diced
  • ¼ of large red onion finely chopped
  • 2 cloves garlic minced
  • 3 Tablespoon extra virgin olive oil
  • fresh parsley optional
  • salt to taste

Instructions

  1. In a medium salad bowl, combine diced tomatoes, red onion, and minced garlic. Season with salt to taste and add about 4 - 5 Tbsp olive oil.
  2. If you wish, you can garnish the tomato salad with freshly chopped parsley.

Notes

  • You can use any tomatoes you like in this salad, just be sure that they are perfectly ripe, but not too soft.
  • I like to finish the salad with parsley for some freshness, but you can use chopped basil or omit this if you like.
  • Taste the salad before serving and adjust the salt if needed.
