This tomato salad is wonderful. Only 3 ingredients and you have a flavorful refreshing summer salad. It can be served as a side dish or as a salad.

Ingredients
- 4 tomatoes diced
- ¼ of large red onion finely chopped
- 2 cloves garlic minced
- 3 Tablespoon extra virgin olive oil
- fresh parsley optional
- salt to taste
Instructions
- In a medium salad bowl, combine diced tomatoes, red onion, and minced garlic. Season with salt to taste and add about 4 - 5 Tbsp olive oil.
- If you wish, you can garnish the tomato salad with freshly chopped parsley.
Notes
- You can use any tomatoes you like in this salad, just be sure that they are perfectly ripe, but not too soft.
- I like to finish the salad with parsley for some freshness, but you can use chopped basil or omit this if you like.
- Taste the salad before serving and adjust the salt if needed.
