Tortas De Cochinita Pibil

Tortas De Cochinita Pibil are Mexican sandwiches made with warm bolillo bread toasted with butter, filled generously with tender cochinita pibil pork, creamy avocado, and tangy pickled onions. Optionally, mayonnaise and jalapeños add extra moisture and spice. The layers provide a contrast of crunchy bread, soft pork, and fresh toppings, offering a hearty and flavorful handheld meal.

Description

Tortas De Cochinita Pibil feature bolillo bread, butter toasted to add a slight crunch and richness, filled with slow-cooked cochinita pibil pork known for its smoky and spiced flavor. The meat is heated until hot and piled generously onto the bottom half of the bread. Layered atop are pickled onions which introduce a sharp, tangy contrast, creamy slices of avocado that cool and smooth the sandwich, and optional jalapeños for heat.

Toasting the buns with butter creates a toasted, buttery texture that holds up to the moist filling. Mayonnaise can be spread on the toasted bread to add richness and help keep the sandwich moist. Pressing the sandwich gently before serving melds the components without compressing them too much, preserving the textures.

The amount of pork used per sandwich can be adjusted depending on preference, starting with about one cup per torta. These sandwiches are best enjoyed warm.
