Tortellini Alfredo
Description
The Tortellini Alfredo recipe features refrigerated tortellini cooked alongside broccoli, which provides a subtle vegetable balance. The Alfredo sauce is made by melting butter and lightly sautéing garlic before whisking in flour and half-and-half to create a delicate white sauce base. Parmesan and Romano cheeses are then incorporated off the heat to thicken the sauce without clumping. Cooking the broccoli briefly preserves its texture and color while complementing the rich sauce and pasta.
The finished dish offers a creamy, cheesy coating wrapped around tender cheese-filled tortellini, accented by the mild crunch of broccoli. Parsley garnish contributes a fresh herbal note. This dish suits a filling lunch or dinner and can be paired simply with a green salad for added freshness.
Notes recommend using refrigerated tortellini varieties and adjusting cooking times accordingly. The sauce’s thickness can be adjusted by simmering longer before adding pasta and vegetables, allowing for customization of the dish’s creaminess. The recipe also suggests alternative pasta choices if desired.
