  • 1 teaspoon salt
  • 1 ounce package tortellini or any type refrigerated tortellini, refrigerated, tri-color
  • 2 pints cherry tomato
  • 1 ounce package fresh mozzarella balls
  • ½ cup pesto
  • 2 tablespoons olive oil
  • bamboo skewers

Instructions

  1. Add water and salt to a large pot and bring to a boil.
  2. Add tortellini and cook for about 5-6 minutes, or until tortellini float to the top. Drain and rinse tortellini.
  3. Add tortellini, cherry tomatoes and mozzarella balls to a large bowl. Add pesto and olive oil and toss to coat.
  4. Add a tortellini, tomato and mozzarella ball to the skewer and repeat one more time to have 6 pieces on each skewer.
  5. Refrigerate until ready to serve.
